Soft tender cookies? No, wholesome crunchy cookies with no added sugar that you can devour totally guilt-free. NO ADDED SUGAR, not an iota. High in fibre, they also contain a fair amount of protein. And are they good? You bet they are! Molto, molto délicioso! Since the beginning of the Madame Labriski adventure, I’ve been making healthy cookies that are soft and tender because that’s the sort of texture I like.
But…
My kids recently asked me why I never make the crunchy kind of cookies. I explained that I never use any fat (like vegetable oil) in my cookies… and it’s the fat that give cookies their crunchiness.
Then…
I thought it might be interesting to explore the world of regular, crunchy cookies… with of course the Madame Labriski health twist.
I’m kicking things off with these healthy cookies that make for a perfect snack. Yes, they contain very little fat and are high in fibre. Check out the lovely list of wholesome ingredients.
What’s more, I’m taking this opportunity to tell you all about lupin flour.
DON’T HAVE ANY LUPIN FLOUR? That’s a minor detail, just follow the recipe using oat flakes or another type of flour instead (yes, the same amount, that is to say ¼ cup or 25 g).
