Ingredients

  • 100 g (1/3 cup) Madame Labriski caramel date puree

  • 60 g (1/2 cup) ground cashew nuts (or almonds or pecans)

  • 12 g (2 tbsp.) cocoa

  • 120 g (1 cup) finely chopped pecans

  • (1/8 tsp.) fleur de sel

6 steps

  • Wash your hands properly.

  • Put the first three ingredients into a bowl and stir well.

  • Incorporate the finely chopped pecans and fleur de sel and mix again.

  • Roll the dough into beautifully round little balls to create your Labriskiballs.

  • Presto! That’s all there is to it. I can’t wait to hear what you think of them.

  • P.S.: These Labriskiballs will be just as delicious if you make them with vanilla or chocolate date puree. If you use the regular date puree, they’ll still be good but they won’t have that caramel taste, so you’ll need to add caramel extract (1/2 tbsp.).

History

MADE WITH NO REFINED SUGAR, these no-bake and super easy to make little balls of energy called Mom, You’re the Best (choco-caramel, pecan and fleur de sel) deliver moments of pure bliss with every bite. Created especially for Mother’s Day, they have a magical ability to turn the most humdrum, routine kind of day into one of lavish celebrations. Isn’t that the role mums often play anyway? (And dads too… I know.)

To be honest, these Labriskiballs are very similar to those little chocolate, caramel and pecan chocolates called Turtles. And to make them just a little bit more stylish, I’ve added a pinch of fleur de sel. This recipe is also a finger-licking fun activity, so why not make some with your kids?

To be perfectly honest, I sometimes wonder why there are still so many recipes out there that call for refined sugar. I hope these Labriskiballs will make your kids, friends and family feel like shouting out at the top of their voice: Mum, you’re the best! Hurray for date puree!

FAQ

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

What can I use as a substitute for one type of nut?

Simply any other type of nut you have in the cupboard (almonds, cashews, pecans, etc.). For example, if you don’t have any walnuts, you can use pecans. The important thing is not to tear your hair out!
