  • 2/3 cup (200 g) of Madame Labriski date puree

  • 1/4 cup (50 g) vegetable oil (canola, sunflower or camelina)

  • 2 eggs

  • 1 tbsp (15 ml) baking power

  • A pinch of salt

  • 1 1/4 cup (150 g) whole wheat flour (or gluten free)

  • 1/2 cup (100 g) dark or milk chocolat chips

  • 2 tbsp. (15 g) ground flaxseed (or chia seeds or insect powder)

  • Optional: green food colouring – several drops

  • 2/3 cup (200 g) of Madame Labriski date puree

  • 1/4 cup (50 g) vegetable oil (canola, sunflower or camelina)

  • 2 eggs

  • 1 tbsp (15 ml) baking power

  • A pinch of salt

  • 1 1/4 cup (150 g) whole wheat flour (or gluten free)

  • 1/2 cup (100 g) dark or milk chocolat chips

  • 2 tbsp. (15 g) ground flaxseed (or chia seeds or insect powder)

  • Optional: green food colouring – several drops

8 steps

  • Preheat oven to 350°F (180°C);

  • Line your baking sheet with parchment paper or a silicone mat;

  • In a bowl, combine the date puree, vegetable oil and eggs;

  • Stir in the baking powder, salt and peppermint extract;

  • Finally, add the flaxseed, flour and chocolate chips and stir well;

     

  • Add the green food colouring vert (according to the desired tone of green) and give it another good stir;

  • Spoon the mixture onto the baking sheet, using a spoon or measuring scoop. If desired, decorate with a few chocolate chips. Bake for 15 minutes;

  • Watch out! It’s going to smell like pure happiness. Allow to cool and then dig in.

History

My kids love the combination of mint and chocolate. Every time I bake a batch of these cookies, they come hopping along. Happiness in the shape of healthy cookies… that are green.

FAQ

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

What do I do if I’m using a convection oven?

Set the oven to 160°C (325°F) instead of 180°C (350°F) and bake for the same specified length of time.
