  • 150 g (½ cup) unsweetened applesauce

  • 1 egg

  • ½ tsp. baking soda

  • 1 tsp. baking powder

  • The zest of 2 limes

  • 1½ tbsp. lime juice

  • Pinch of salt

  • 100 g (1 cup) powdered almonds

  • 100 g (1 cup) quick cooking oats* or quinoa flakes

    *For a GLUTEN-FREE version, use certified gluten-free oats. Of course, quinoa flakes are naturally gluten-free.

  • 40 g (¼ cup) chia seeds

  • Optional: 100 g (½ cup) dark or white chocolate chips.

  • Preheat oven to 350°F (180°C).

  • In a bowl, mix together the Madame Labriski date puree (original or vanilla), unsweetened applesauce and egg until well combined.

  • Now add the following ingredients: baking soda, baking powder, lime zest, lime juice and a pinch of salt. Wait for that little bubbling effect (just for the fun of it, because I’m equally amazed every time!) and mix well.

  • Gradually stir in the powdered almonds, oats* or quinoa flakes, chia seeds and dark or white chocolate chips. Give it another good stir!

    *For a GLUTEN-FREE version, use certified gluten-free oats. Of course, quinoa flakes are naturally gluten-free.

  • Line your sheet with parchment paper or a silicone baking mat, if not everything will stick.

  • Drop the dough onto the sheet using a spoon or measuring scoop to create nice plump Labriski cookies.

  • TIME TO USE YOUR CREATIVITY! Garnish with some lime zest, oats or quinoa.

  • Bake for about 15 minutes. Allow the cookies to cool on a rack before digging in.

FAQ

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

Is almond powder the same thing as ground almonds?

Yes. Almond powder, ground almonds, almond flour… they’re pretty much the same thing. Almond flour is available at supermarkets but the almonds are ground more finely. That being said, when a recipe calls for almond flour, you can easily use ground almonds instead.

What can I use as a substitute for almond powder or hazelnut powder?

You can always substitute one type of nut powder for another type of nut powder or even powdered seeds (sesame seed or sunflower seed powder). You can also replace almond powder with organic tiger nut powder. (Tiger nuts are a tuber.)

What can I use as a substitute for oatmeal?

Any kind of cereal flakes: quinoa, buckwheat, spelt, etc. If you are gluten intolerant, you can buy oatmeal that is certified gluten-free.
