  • Preheat the oven.

  • In a bowl, combine the date puree, applesauce and egg.

  • Add the pure vanilla extract, baking soda, baking powder, ground cinnamon, ground nutmeg, zest of 2 oranges and salt. Wait for a light frothing to occur (just for fun), then mix well.

  • Mix in the finely grated carrot, flour, wheat germ, walnuts and dried currants until combined.

  • Line a baking sheet with parchment paper or a silicone mat – otherwise, everything will stick.

  • Drop spoonfuls of dough to create beautifully round energy cookies. Decorate as desired.

  • Bake for the time indicated. Transfer the baked cookies to a cooling rack, and bask in their mouthwatering aroma. Enjoy them on Mondays, Tuesdays, Wednesdays, Thursdays…

History

A carrot cake-style energy cookie? You bet. This simple recipe with NO REFINED SUGAR is a healthy take on my grandma’s carrot cake. And why does it have such a funny name? Because when I was at university, every week I ate so many carrots that the palms of my hands turned an “orangey” colour, the reason being the beta-carotene in carrots. Hahaha! The Self-Tanner cookie is a totally guilt-free indulgence, bien sûr.

Simply any other type of nut you have in the cupboard (almonds, cashews, pecans, etc.). For example, if you don’t have any walnuts, you can use pecans. The important thing is not to tear your hair out!
