  • 180 g (1 1/2 cups) whole wheat, whole grain spelt or any other flour of your choice

  • 80 g (1/2 cup) unsalted sunflower seeds

  • 100 g (1/2 cup) dark chocolate chips (75% or higher)

5 steps

  • Preheat oven to 350°F (180°C).

  • Put the date puree, yogurt, egg, mashed banana and vanilla extract into a bowl and stir until well combined.

  • Next gradually fold in the flour of your choice and then add the flax and sunflower seeds and finally the chocolate chips. I can tell you right now, the dough is going to smell amazing… oh la la bananahhhh.

  • Line your cookie sheet with either a silicone baking mat or parchment paper. There’s no fat whatsoever on the cookie sheet so if you don’t, EVERYTHING WILL STICK! And nobody wants to have to spend time scrubbing cookie sheets now do they?

  • Using two teaspoons, or tablespoons if you prefer, drop the dough onto the sheet to make nice plump cookies. Pop them in the oven for 15 minutes at the temperature specified above and, one you’ve allowed them to cool, bite into the taste of pure happiness.
