Could there actually be such a thing as a NUT and PEANUT FREE muffin that doesn’t contain any chocolate either? Hahaha! You bet! Introducing the Back-to-School Morning Boost! muffin, with its subtle autumnal flavour (just a hint) that’s perfect when you need to stock up on good energy. My daughter just loves cranberries and their slightly tangy taste so I felt like concocting a scrumptious muffin that she could eat as a morning or afternoon snack, or before figure skating or soccer practice.
Here it is! A truly wholesome muffin, which is delicious topped with vanilla date puree (yes, it can be used as frosting), spread with peanut butter or eaten simply as it is. Once again, the gluten-free and vegan versions are just as tasty. And that’s something I can definitely confirm as I’ve tried and tested them time and time again.
Did you know that, out of all the seeds and nuts out there, pumpkin seeds are the ones that contain the most protein? Now that’s a delectable piece of information, right?
