  • 30 g (¼ cup) cornstarch

  • 15 ml (1 tablespoon) pure vanilla extract or artificial caramel extract (optional)

  • 40 g (⅓ cup) chopped pecans, for decoration

  • 55 g (⅓ cup) SKOR caramel toffee bits or dairy-free caramel chips, for decoration

  • 100 g (⅓ cup) Madame Labriski date puree

  • 4 egg yolks

  • 30 g (¼ cup) cornstarch

  • In a bowl, combine the date puree, egg yolks, cornstarch and vanilla extract or caramel extract.

  • In a saucepan over medium heat, warm up the milk.

  • As soon as it starts simmering, vigorously whisk in the date puree mixture from step 1.

  • Simmer for a short time . . . until the mixture thickens.

  • Pour the mixture into a square 8 inch (20 cm) pan.

  • To make it even better, top with the chopped pecans, SKOR caramel toffee bits or dairy-free caramel chips and sliced fresh banana or banana chips. Have fun!

  • Cover and refrigerate.

  • Serve in small bowls.

History

Once upon a time there was a Madame who wanted to indulge in delicious food and change the world of sweet desserts. One day, she decided to invent a pastry cream that would break with convention. TA-DAMSKI! The children shouted with joy and the whole family sat and ate the entire pie for dessert. Is it sweetened with either the vanilla or caramel date puree? Of course, and it contains no added refined sugar. That’s the reason everyone is using this cream in all their favourite recipes. Bye-bye refined sugar, hello date puree. Hahaha!

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

The recipe calls for a plant-based beverage, can I use regular cow’s milk instead?

Yes, always.

What can I use as a substitute for one type of nut?

Simply any other type of nut you have in the cupboard (almonds, cashews, pecans, etc.). For example, if you don’t have any walnuts, you can use pecans. The important thing is not to tear your hair out!
