  • 125 ml (½ cup) plant-based milk or milk of your choice

  • 1 egg

  • 1 tablespoon (15 ml) pure vanilla extract

  • 2 teaspoons (10 ml) baking powder

  • Pinch of salt

  • 60 g (½ cup) spelt flour or whole wheat flour

  • 120 g (1¼ cups) graham cracker crumbs

  • 40 g (¼ cup) chia seeds

  • 30 g (¼ cup) ground flaxseeds

  • 60 g (½ cup) chopped walnuts

  • 25 g (½ cup) unsweetened shredded coconut

  • 50 to 100 g (¼ to ½ cup) dairy-free dark chocolate chips, to taste

  • 30 to 60 g (½ to 1 cup) marshmallows (very optional), to taste

  • Decoration: Graham cracker crumbs, chopped nuts, unsweetened shredded coconut and dark chocolate chips

  • Preheat the oven to 350°F (180°C).

  • In a bowl, thoroughly combine the date puree, milk, egg, vanilla extract, baking powder and salt.

  • Incorporate the flour, graham cracker crumbs, chia seeds, flaxseeds, chopped walnuts, shredded coconut, chocolate chips and marshmallows.

  • Line a 5 × 9 inch (13 × 23 cm) loaf pan with parchment paper or lightly grease—otherwise, everything will stick.

  • Pour the dough into the pan. Decorate the cake with graham cracker crumbs, chopped nuts, coconut, and dark chocolate chips from the pink section.

  • Bake for about 50 minutes.

History

This cake is absolute madness. Well ok, I admit it’s cheating a bit with the marshmallows and chocolate chips but then again, it’s sweetened with date puree and there’s no added fat so it’s still a good option when you’re in need of a bit of indulgence. My kids love making s’mores when we go camping, they could eat them non-stop. So, I came up with the idea of creating a cake that would make us feel as though we’re in camping mode all year round. Enjoy the memories!

If you bake this cake, I’m sure your house will resound with great shouts of joy. It’s excellent with regular date puree and slightly more decadent if you use caramel date puree. Won’t this just add more sugar to the cake? NO, NO, NO! There’s no added sugar whatsoever in any of my date purees. All there is are dates. In fact, why do so many recipes for date squares call for added sugar or brown sugar? It just doesn’t make sense when you think about it. Incidentally, my hubby could eat the whole thing in one sitting.

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

The recipe calls for a plant-based beverage, can I use regular cow’s milk instead?

Yes, always.

What can I use as a substitute for one type of nut?

Simply any other type of nut you have in the cupboard (almonds, cashews, pecans, etc.). For example, if you don’t have any walnuts, you can use pecans. The important thing is not to tear your hair out!
