  • 150 g (½ cup) fancy or blackstrap molasses

  • 25 g (2 tbsp.) vegetable oil (or canola, camelina or olive oil)

  • 1 egg

  • 7 g (1 tbsp.) baking powder

  • 7.5 ml (½ tbsp.) ground cinnamon

  • Pinch of salt

  • 20 g (2 tbsp.) chia seeds, whole or ground

  • 90 g (1 cup) quick-cooking oats

  • 180 g (1½ cups) gluten-free flour (or white, wheat or buckwheat flour)

  • 40 g (¼ cup) raisins

  • Optional! 35 g (1/3 cup) pecans

  • Preheat oven to 180°C (350°F).

  • Line your baking sheet with parchment paper – otherwise, everything will stick.

  • In a bowl, combine the date puree, molasses, vegetable oil and egg.

  • Stir in the following ingredients: baking powder, salt, cinnamon and chia seeds. Wait for that little bubbling effect and stir well.

  • Incorporate the oats and flour and mix until well combined. Finally, add the remaining ingredients and stir.

  • Drop the dough onto the baking sheet using a measuring scoop or tablespoon.

  • Bake for approximately 15 minutes at 350°F.

  • Allow to cool slightly.

  • Wow, just wait and see how delicious they smell!

Who wants a healthy take on those famous molasses cookies? I simply can’t believe it when I see recipes for molasses cookies that call for so much white sugar and brown sugar and then a ton of butter. Is it really necessary?

At Madame Labriski, I try as much as possible to offer recipes that are each always even more energizing than the last. So here you have it, a genuinely healthy version of the recipes you usually come across here, there and everywhere.

A close relative of the famous Teddy Bear Paw recipe, this version has a little oatmeal (and a smidgen of oil) added to it, making it the perfect breakfast treat.

I can’t stress this enough: blackstrap molasses contains three times more iron than fancy molasses. If you don’t like the slightly more pronounced taste, simply use half fancy molasses and half blackstrap molasses. Bon appétit!
