  • 150 g (1/2 cup) Madame Labriski date puree

  • 75 g (1/4 cup) natural almond butter

  • 15 ml (1 tablespoon) pure almond extract

  • 1 egg

  • 40 g (2 cups) puffed rice, or 100 g (3 1/3 cups) puffed rice-style cereal

  • 30 ml (2 tablespoons) chia seeds

  • 25 g (1/4 cup) almond flour

  • 75 g (3/4 cup) slivered almonds

7 steps

  • Preheat the oven to 350°F (180°C).

  • In a bowl, combine the date puree, natural almond butter, pure almond extract and egg.

  • Add the puffed rice (or puffed rice-style cereal), chia seeds, almond flour and slivered almonds and mix until combined.

  • Line a baking sheet with parchment paper or a silicone mat- otherwise, everything will stick.

  • Using a spoon, spread the mixture onto the baking sheet. Don’t be afraid to firmly press it down onto the baking sheet so the bars hold together.

  • Bake for about 15 minutes. A delightful aroma will soon sweep through the kitchen.

  • Let cool before slicing into bars or whichever fun shape you want.

On the heels of my Crunchy Energy bars comes this 2nd recipe for Madame Labriski chewy granola bar-style cereal bars: The Rice and Shine! These rice cereal bars are presented here in two different varieties: the first has almonds and the second has peanuts and chocolate. GLUTEN- and DAIRY-FREE, with NO ADDED SUGAR or FAT, they are super quick and easy to make, bursting with wholesomeness and provide a good dose of energy. Just try them, I’m sure you’ll be hooked. It’s time to Rice and Shine!

*I experimented with two kinds of rice cereal: puffed rice-style cereal and organic Rice Krispies. Both versions are great, you just need to be careful because they don’t weigh the same.

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

What can I use as a substitute for almond butter?

Natural peanut butter. People with nut allergies can use sesame seed butter or Wowbutter.

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
