  • 2 tbsp. water

  • 7 g (1 tbsp. or 15 ml) baking powder

  • 2 g (1 tsp.) ground cinnamon

  • 30 g (1/4 cup) oat or wheat flour (or gluten-free all purpose)

  • 25 g (1/4 cup) quick-cooking oats

  • Wash your hands properly.

  • Preheat oven to 180°C (350°F).

  • Cut the apples into chunks. (Make sure to remove the cores and seeds.)

  • Put the apple chunks into a bowl, add the date puree, cinnamon, dried cranberries and pumpkin seeds and stir well.

  • Pour the mixture into an 8-inch Pyrex dish.

  • Prepare the pastry using the same bowl. (because we wouldn’t want the spices that have stuck to the sides to go to waste.)

  • In the bowl, thoroughly combine the date puree, applesauce, egg and water.

  • Mix in the baking powder, cinnamon, flour and oats.

  • Spread the pastry over the apple mixture.

  • If desired, decorate with a sprinkling of oats and some dried cranberries.

  • Bake for 55 minutes… oh my, it’s going to smell so nice in the house!

Because I felt like creating the ULTIMATE autumn dessert, I added dried cranberries that contain NO ADDED SUGAR. A wonderful new little product which gives it that irresistible touch of tartness.

Bravo! Plus, as we know, dried cranberries are small berries that are high in antioxidants, which is excellent for our health and in preventing certain diseases.

The Apple of My Eye is a wholesome apple, cinnamon and cranberry dessert with no added sugar that you’ll simply love to serve to your guests. Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

What can I use as a substitute for oatmeal?

Any kind of cereal flakes: quinoa, buckwheat, spelt, etc. If you are gluten intolerant, you can buy oatmeal that is certified gluten-free.
