  • 180 g (1½ cups) wheat flour (or oat or gluten-free flour)

  • 40 à 80 g (¼ to ½ cup) unsweetened dried cranberries

  • Preheat oven to 350°F (180°C).

  • Line a muffin pan with paper or silicone baking cups, otherwise everything will stick.

  • In a bowl, combine the date puree, applesauce, eggs and milk (or plant-based beverage).

  • Stir in the baking powder, salt, lemon zest and poppy seeds.

  • Add the flour and dried cranberries and mix well.

  • Spoon the mixture into the baking cups and garnish with dried cranberries.

  • Bake for 25 to 30 minutes.

  • Even though they smell lemony lovely, allow the muffins to cool before digging in.

History

I love the taste of lemon and everything lemony. I felt like concocting a recipe for REAL muffins that are as healthy as they are tasty… with lemon zest and poppy seeds. TA-DAH! The end result is this moist and tender, HEALTHY, LIGHT and joyfully delicious muffin called Oh My Lemons!

With NO SUGAR, NO FAT and bursting with flavour, these muffins have everything going for them and make a true mockery of all those super sickly sweet versions. And they’re super easy to make too!

Why do they keep trying to sell us muffins that are overly sweet and far too high in fat everywhere we go? It’s such a breeze to get the perfect sweetness while increasing the fibre content… by sweetening with date puree. YAY!

A TIP to ensure your muffins well and truly contain no refined sugar, I suggest you use dried cranberries sweetened with fruit juice. They are moist, tender and delicious.

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

The recipe calls for a plant-based beverage, can I use regular cow’s milk instead?

Yes, always.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.
