7 steps

  • Preheat the oven to 400°F (200°C).

  • In a bowl, combine the date puree, milk of your choice and egg.

  • Add the pure vanilla extract, baking soda, baking powder, zest of 1 lemon and salt. Wait for a light frothing to occur (just for fun), then mix well.

  • Mix in the flour, chia seeds and blueberries until fully combined.

  • Line a muffin pan with parchment paper or silicone liners. If you don’t have liners, lightly grease the pan- otherwise, everything will stick.

  • Divide the mixture evenly among the muffin cups.

  • Bake for about 40 minutes. Yum! Smells like happiness!

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Yes, always. You can also use hemp seeds.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).
