  • 75 g (1/2 cup) all-purpose flour, regular or gluten-free

  • 150 g (1 ½ cups) quick-cooking rolled oats

  • 30 g (1/4 cup) ground flaxseeds

  • 60 g (1/2 cup) chopped walnuts, plus extra for garnish

  • 15 ml (1 tablespoon) pure vanilla extract

  • 2 ml (1/2 teaspoon) baking soda

  • 15 ml (1 tablespoon) baking powder

  • 15 ml (1 tablespoon) ground cinnamon

  • 22 ml (1 ½ tablespoons) ground ginger

  • Pinch of ground nutmeg

  • 75 g (1/2 cup) all-purpose flour, regular or gluten-free

  • 150 g (1 ½ cups) quick-cooking rolled oats

  • 30 g (1/4 cup) ground flaxseeds

  • 60 g (1/2 cup) chopped walnuts, plus extra for garnish

  • 65 g (1/2 cup) raisins, plus extra for garnish

  • 65 g (1/2 cup) shelled green pumpkin seeds, plus extra for garnish

  • Preheat the oven to broil

  • In a bowl, combine the diced pumpkin flesh, ground cinnamon and ground ginger.

  • Spread the mixture over a baking sheet lined with parchment paper or a silicone mat, and bake for 5 minutes. Set aside.

  • Lower the heat to 350°F (180°C).

  • In a bowl, combine the date puree, applesauce and eggs.

  • Add the pure vanilla extract, baking soda, baking powder, ground cinnamon, ground ginger and ground nutmeg. Wait for a light frothing to occur (just for fun), then mix well.

  • Mix in the flour, quick-cooking rolled oats, ground flaxseeds, chopped walnuts, raisins, green pumpkin seeds and the baked pumpkin until combined.

  • Lightly grease a 7-inch (18 cm) round cake pan- otherwise, everything will stick.

  • Transfer the delicious cake mixture into the pan.

  • Decorate with walnuts, raisins, and pumpkin seeds as desired. Have fun!

  • Bake for about 1 hour and 20 minutes. Let cool before removing from the pan.

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

What can I use as a substitute for oatmeal?

Any kind of cereal flakes: quinoa, buckwheat, spelt, etc. If you are gluten intolerant, you can buy oatmeal that is certified gluten-free.
