  • 80 g (1 cup) soy protein powder (or powdered soy milk)

  • 40 g (¼ cup) chia seeds

  • 35 g (¼ cup) hulled hemp seeds

  • 150 g (1 cup) chopped peanuts (salted or unsalted)

Ingredients

  • 150 g (½ cup) Madame Labriski date puree

  • 150 g (½ cup) natural peanut butter

  • 230 g (1 cup) plant-based beverage (soy, almond, etc.) or cow’s milk

  • 90 g (1 cup) quick cooking oats (gluten-free)

  • 80 g (1 cup) soy protein powder (or powdered soy milk)

  • 40 g (¼ cup) chia seeds

  • 35 g (¼ cup) hulled hemp seeds

  • 150 g (1 cup) chopped peanuts (salted or unsalted)

  • 100 g (1 cup) Reese’s peanut butter chips or chocolate

7 steps

  • Preheat oven to 350°F (180°C).

  • Put all the ingredients into a bowl and mix well.

  • Line your baking sheet with parchment paper or a silicone baking mat, otherwise everything will stick.

  • Spread the mixture evenly onto the baking sheet and press firmly to obtain a thickness of about 2,5 cm.

  • Bake for approximately 30 minutes.

  • Allow to cool and cut into bars using a pizza cutter.

  • Does it smell yummy? No, it smells like victory. Hahaha!

History

At the height of the training season for my upcoming marathon, I’m just hungry all the time. So, I like to have high-protein snacks on hand for after one of my workout sessions. I also like to be able to give snacks that are “zero waste” to my little budding figure skater and my little future swimming champion. These vegan protein bars made with “powdered” soy milk are a delicious and easy to make solution. And you know what? They kind of taste of victory. Hahaha! And with 11 grams of protein per 50 g serving, they definitely have a great batting average. Hahaha!

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

What can I use as a substitute for soy protein powder (soy milk powder)?

I’ve noticed that all protein powders are unique. They have different textures and also react differently to liquids.  It therefore depends on each individual recipe. You can try using flour or cornstarch, but to be perfectly honest I haven’t yet tested them in all my recipes.

What can I use as a substitute for oatmeal?

Any kind of cereal flakes: quinoa, buckwheat, spelt, etc. If you are gluten intolerant, you can buy oatmeal that is certified gluten-free.
