  • Power Stovetop temperature: medium heat
  • Quantity 1½ cups

  • 100 g (1/3 cup) date puree

  • 500 g (4 cups) frozen raspberries (a whole bag)

  • 2 tbsp. lemon juice

  • (optional) 3 tbsp. chia seeds

  • 100 g (1/3 cup) date puree

  • (optional) 3 tbsp. chia seeds

Section 02

  • 2 g (1 packet) agar-agar or 1 packet of gelatin powder

5 steps

  • In a saucepan, combine all the ingredients from the first section.

  • Simmer over medium heat for approximately 10 minutes, stirring from time to time.

  • Add the ingredient of your choice from the second section.

  • Transfer into one or two jars and refrigerate.

  • Simple, right?

History

I just love raspberries. I had this idea that popped into my head for a raspberry spread, jam and sauce all in one with NO ADDED SUGAR. Something really yummy, something with quadruple fruit. So, I tested my idea and came up with this super easy recipe that’s both light and fresh. You can spread it on toast, add some to your yogurt or ice-cream… and even use it in your favourite desserts. The possibilities are endless. Bon appétit!

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
