  • 60 g (¼ cup) plant-based beverage or milk

  • 50 g (½ cup) whole wheat or oat flour (or flour of your choice)

  • 40 g (¼ cup) dark chocolate chips

  • Preheat oven to 180°C (350°F).

  • In a bowl, combine the egg, bananas, vegetable oil, baking powder, salt, thyme, chia seeds and plant-based beverage or milk.

  • Stir in the flour, oats, walnuts and chocolate chips.

  • Set the stovetop to medium-low heat.

  • Warm up the olive oil (a drizzle or 1 tbsp.) in a 9-inch skillet set over medium-low heat.

  • Spread the mixture evenly in the skillet and cook for 5 minutes.

  • Decorate with sliced banana, walnuts and thyme leaves, if desired.

  • Have fun and be creative!

  • Pop in the oven for 20 minutes to finish cooking… and bask in that wonderfully mouth-watering aroma.

History

This banana bread recipe doesn’t call for any date puree. EXCUSE ME? Yep, it’s one of my very few recipes that don’t contain date puree… or added sugar.  This time, the bananas steal the show.

Unbelievable but true, banana and thyme is an outstanding taste combination. And this recipe is as wholesome as it is delicious. What’s not to like?

This recipe is another great example that proves we don’t need to use sugar (white or brown) to sweeten our decadent desserts and snacks.
