  • 2 eggs

  • 195 g (3/4 cup) orange juice

  • 1 tbsp. baking powder

  • Pinch of salt

  • 1½ tsp. ground cinnamon

  • The zest of 2 oranges

  • 2 tbsp. ground flaxseed

  • 240 g (2 cups) oat, whole wheat or gluten-free flour

  • 15 pitted dates, chopped

  • Garnish: 12 date halves and a little orange zest

  • Preheat oven to 180°C (350°F)

  • Line your muffin pan with paper or silicone baking cups, otherwise everything will stick. (Yes, you got it, that’s because there’s no fat whatsoever in these muffins).

  • In a bowl, thoroughly combine the date puree, eggs and orange juice.

  • Stir in the baking powder, salt, spices, orange zest and flaxseed.

  • Add the flour and dates and mix well.

  • Spoon the mixture into the baking cups and decorate with date halves and some orange zest, if desired.

  • Bake at 350°F for 25 minutes. YUMSKI! You house is going to smell of pure happiness and sunshine.

History

Healthy muffins are great but muffins with NO ADDED REFINED SUGAR are even better. Sweetened with date puree, these muffins are not only healthy, but they’re also totally scrumptious. Can somebody tell me why there are still so many muffins disguised as cakes on grocery store shelves?

I decided to come up with a cookbook for wholesome muffins because I was frustrated with the lack of muffin options and recipes available out there (because they’re not healthy at all.)

We want to eat healthy! We want delicious recipes so we can indulge while still taking care of ourselves. We want happiness and loads of date puree. Did you know? Sweetening with date puree is a way of increasing the amount of fibre, and fibre is what helps to keep us going for long periods of time. What more could you ask for?

Yes, I’m proud to say that I’ve declared war on refined sugar. And this recipe was featured in the IGA flyer because it showcases my dates that are proudly certified Aliments préparés au Québec (people have been asking me for ages which dates I use in my recipes). There you have it!

These muffins are sweetened with date puree but they also contain succulent date chucks to make them… just that little bit sweeter. Will you be able to resist the temptation to try out this amazingly healthy recipe?

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Why do Madame Labriski whole dates taste of caramel?

My whole dates that taste of caramel are my premium ones. I felt like offering reasonably priced dates with unique added value. Pop one in your mouth and take the time to savour its caramel taste. Isn’t what nature has to offer delicious? I’m really proud of them. They make for an amazing wholesome and energizing snack. Bon appétit!
