  • 200 g (2/3 cup) Madame Labriski caramel date puree (or other)

  • 115 g (1/2 cup) milk or cream (or plant-based beverage or cream)

  • 1 to 2 tbsp. caramel extract (or vanilla extract)

  • 2 tbsp. cornstarch

  • 3,5 g (1/2 pouch) gelatin or 4 g agar-agar powder

  • 1/2 tsp. fleur de sel

  • 80 g (1/2 cup) pecans, coarsely chopped

  • 80 g (1/2 cup) chunks of dates that taste of caramel

  • Optional: 50 g (1/4 cup) Skor caramel toffee bits

  • Garnish: 12 pecans and fleur de sel

  • Wash your hands. It’s important ;-)

  • Preheat oven to 350°F.

  • In a bowl, prepare the homemade crust and spread the mixture over the bottom of a lightly-greased tart baking pan or make your life easier by using Tenderflake mini tart shells.

  • Place the shells on a baking tray.

  • Prepare the filling. In a saucepan, mix together the date puree, milk (or cream) and caramel extract (or even simpler, use the caramel flavoured date puree).

  • Bring to a boil over medium heat, stirring constantly with a whisk.

  • Remove from heat and stir in the cornstarch and gelatin.

  • Add the date chunks, pecans and, if desired, the Skor toffee bits, and stir.
    Pour the filling into the tart shells.

  • Add a pecan and a tiny pinch of fleur de sel to each tart.

  • Bake for 35 minutes.

  • Your house will be filled with the wonderful aroma of caramel and you’ll make everyone happy. Bask in the magic… of indulging in a decadent yet totally wholesome treat. Bon appétit!

My hubby and my kids love sugar pie and pecan pie. I wanted to come up with a healthier version of these two delicious and ever popular classics. The last thing I wanted was loads of corn syrup or mountains and mountains of white or brown sugar. Why is there so much in every recipe? When you sweeten with date puree, you’re automatically adding fibre… and that’s what makes all the difference.

Now that my dates for cooking and the ones that taste of caramel for snacking (yes, you read that right) have entered the market, I had no choice but to tease you with this typically festive and mouth-watering recipe.

Whether you make them using the recipe for a homemade crust (with or without gluten) provided in the Fairy-of-the-Fields and Caramel Blue Fairy recipes or you decide to keep it simple with store-bought pastry shells, these tarts take no time at all to make.

Madame Labriski, which dates do you use to make your puree?

I’ve been asked that question so many times that I decided to offer the actual dates used to make my date puree sold in grocery stores. How cool is that? Plus, these ones are date halves… to make life easier for you!

Why do Madame Labriski whole dates taste of caramel?

My whole dates that taste of caramel are my premium ones. I felt like offering reasonably priced dates with unique added value. Pop one in your mouth and take the time to savour its caramel taste. Isn’t what nature has to offer delicious? I’m really proud of them. They make for an amazing wholesome and energizing snack. Bon appétit! Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
