  • 150 g (1/2 cup) Madame Labriski date puree (regular, vanilla or caramel)

  • 178 g (1½ cups) almond flour

  • 1 tsp. ground cinnamon

Salted caramel version:

  • 150 g (1/2 cup) Madame Labriski date puree (regular, vanilla or caramel)

  • 178 g (1½ cups) almond flour

  • 1 to 2 tbsp. caramel extract (to taste)

  • ½ tsp. fleur de sel

  • Optional: 50 g (¼ cup) chopped Skor caramel toffee bits

Mint chocolate version:

  • 150 g (1/2 cup) Madame Labriski date puree (regular, vanilla or chocolate)

  • 150 g (1 1/4 cups) + 2 tbsp. almond flour

  • 1 tbsp. mint extract

  • 3 tbsp. cocoa

  • Preheat oven to 350°F.

  • Wash your hands.

  • In a bowl, combine all the ingredients in the list for the version you want to make: cinnamon, salted caramel or mint chocolate.

  • Mix until smooth.

  • Line your energy cookie baking sheet (hahaha!) with parchment paper or a silicone mat. If you’re going to spread the dough right to the edges, lightly grease the sheet (otherwise they will stick… yes, these cookies contain no fat whatsoever.)

  • Here comes the fun part: take a small portion of dough and very carefully create the shapes the want (it’s just like play dough!)

  • Madame’s tip for using cookie cutters: make a ball, gently flatten it and place the cutter on top. Cut out the shape, remove the cutter and place the cookie on the baking tray. Repeat.

  • Bake for 15 minutes at 350°F.

  • For a crunchier version, allow them to dry and then bake for an additional 10 minutes at 170°F.

  • OH! Just wait and see how good your kitchen’s going to smell.

  • Allow to cool before treating yourself to some scrumptious joy with this fun little source of protein and fibre.

History

I felt like making shortbread cookies (my kids love shortbread) and I had this simple recipe idea in my head that kept on whispering to me to give it a try. One morning, I finally made my mind up. I put everything into a bowl. BANG! And then I started experimenting.

In the end, I developed 3 variations on the same theme. A cinnamon version, a salted caramel one and finally, the one my Dridri (Adrien who’s almost 5) likes best, the mint chocolate version.

They’re not really shortbread cookies, but they’re not soft cookies either. They’re like soft and crunchy at the same time. Personally, I just LOVE the texture. So that’s why I decided to call them Soft ‘n’ Crunchy cookies. A really fun little source of PROTEIN and FIBRE.

Naturally GLUTEN FREE, they are also EGG FREE and take no time at all to make. You can also have fun making shapes with the dough… just like play dough. Now there’s a great idea for a family activity.

As always, because they’re sweetened with date puree, they’re super healthy and make for a delicious snack that provides lasting energy. YAY!

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.
