The graham cracker or almond flour (gluten free) crust:

The filling: 

  • 675 g (6 cups) pumpkin, in chucks

  • 460 g (2 cups) water

  • 150 g (1/2 cup) Madame Labriski date puree

  • 1 ½ tsp. ground cinnamon

  • ½ tsp. ground nutmeg

  • 1/4 tsp. allspice

  • 2 tbsp. milk or cream (or a plant-based version)

  • 2 tbsp. cornstarch

  • 3.5 g (1/2 packet) gelatin or 4 g agar-agar

  • Optional: 25 g (1/8 cup) Skor caramel toffee bits

  • Preheat oven to 350°F.

  • In a bowl, combine all the ingredients from the first section to make the crust.

  • Lightly grease a pie pan, otherwise everything will stick.

  • To make the crust, spread the mixture over the bottom of the pan and press down firmly. Set aside.

  • Your challenge: to resist the temptation of tasting the mixture.

  • Prepare the Fit-for-a-Queen filling.

  • In a saucepan, cook the pumpkin chunks in water until they are nice and soft (approximately 15 minutes).

  • Using a potato masher, a hand mixer or a blender (for a perfect texture), blend the hot pumpkin into a nice smooth puree.

  • Stir in the date puree, spices and milk (or plant-based beverage) and mix well.

  • Add the cornstarch and gelatin and stir.

  • Pour the Fit-for-a-Queen filling into the prepared crust.

  • If desired, add Skor caramel toffee bits.

  • Bake for 30 minutes.

  • It’s going to smell like pure happiness again, and everyone will be asking you for the recipe… It’s official, this pie is fit for a queen (and a king too, of course!). Hahaha!

Pumpkin pie is the queen of pies for our American neighbours. I’d never in my life made a pumpkin pie but I felt like giving it a go. As always, I went with my gut instinct and let inspiration guide me. I wanted a pie that was smooth and creamy that you can devour guilt-free without getting a sugar overload. Why add sugar to everything and for no reason? And what if there was an alternative way of making comforting food?

Here’s my unpretentious version. My hubby could eat the whole thing in one sitting. Admittedly, he does like his food… but still. What you’ll like about this one is it’s light and creamy taste.

A smooth, creamy pie with NO ADDED REFINED SUGAR that’s high in fibre. The secret? Date puree. Surprised?

This pie will add a touch of magic and turn your Sunday evening meal into a royal feast. That’s why I called it Fit-for-a-Queen Hahaha! What’s more, it’s super easy to make. The proof: you don’t even need to use a rolling pin. Grab your wooden spoon instead!

P.S.: You can just as easily make this pie using any of the date purees, the regular, vanilla or caramel. Yumski!

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
