  • 15 ml (1 tbsp.) vanilla extract

  • 20 g (2 tbsp.) whole chia seeds

  • 180 g (1½ cups) oat flour (or gluten-free or wheat flour)

  • 30 g (1/3 cup) cocoa

  • 100 g (½ cup) chocolate chips (dark, milk or white)

  • Preheat oven to 180°C (350°F).

  • Line a muffin pan with paper or silicone baking cups, otherwise everything will stick.

  • In a bowl, combine the date puree, applesauce, eggs and milk (or plant-based beverage).

  • Stir in the baking powder, salt, vanilla extract and chia seeds.

  • Add the flour, cocoa and chocolate chips and mix well.

  • Spoon the mixture into the baking cups and garnish with chocolate chips.

  • Bake for 25 to 30 minutes.

  • They’re triply chocolatey. You’ll be full of gratitude to life for still feeling like a kid at heart.

A wholesome triple chocolate muffin that you can sink your teeth into totally guilt-free. A super easy to make muffin that’s sweetened with date puree. What more could you ask for?

When my four-year-old son Adrien ate one, he looked at me, his eyes sparkling, and said “Mommy, you’re the queen of muffins, I love you so much when you’re chocolate-flavoured. Hahaha!

OH AND BY THE WAY! In my latest cookbook, ALL the recipes come with a nutrition fact sheet. Today, I’m making an exception and providing the one for this muffin recipe. It should be noted that it was calculated based on a gluten-free mix but if you’re using wheat flour, the fibre content will undoubtedly be higher. Bon appétit.

FAQ

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

The recipe calls for a plant-based beverage, can I use regular cow’s milk instead?

Yes, always.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious
