  • 150 g (1/2 cup) Madame Labriski date puree

  • 150 g (1/2 cup) nonfat plain yogurt

  • 150 g (1/2 cup) natural peanut butter

  • 1 egg

  • 15 ml (1 tablespoon) pure vanilla extract

  • 2 ml (1/2 teaspoon) baking soda

  • 7 ml (1 ½ teaspoons) baking powder

  • Pinch of salt

  • 150 g (1 cup) spelt flour

  • 30 g (1/4 cup) ground flaxseeds

  • 150 g (1 cup) fresh blueberries

7 steps

  • Preheat the oven.

  • In a bowl, combine the date puree, yogurt, peanut butter and egg.

  • Add the vanilla extrat, baking soda, baking powder and salt. Wait for a light frothing to occur (just for fun), then mix well.

  • Mix in the flour, ground flaxseeds and blueberries until combined.

  • Line a baking sheet with parchment paper or a silicone mat- otherwise, everything will stick.

  • Drop spoonfuls of dough to create beautifully round energy cookies.

  • Bake for about 17 minutes. Transfer the baked cookies to a cooling rack, and bask in their mouthwatering aroma. Such a delightful treat. Délicieux! Delicious!

History

These have got to be the best blueberry and peanut butter cookies ever. Sweetened with date puree, they have that little something that makes them truly unique. Personally, I think they taste ever better if you present them with that distinctive Lac Saint-Jean* accent, làlà.
Deliciously moist and tender, these cookies have a surprising side to them but, more importantly, you’ll love their great summertime vibe. Bake a batch, làlà.

A great source of energy, Oo-Làlà cookies are nourishing, packed with fibre and perfect as a summertime dessert or as a snack at the end of the day.

For me, the best time to eat them is after I’ve been for a long run. (But never before! Peanut butter can sometimes be hard to digest, so better off not taking any chances.) Having said that, I must admit that I have been known to eat them in the morning to kick start my day! Oh!
