Oh-So-Delicious Pumpkin Soup!

The best pumpkin soup I’ve ever, ever made

  • 1 tbsp. vegetable oil

  • 1 onion, finely chopped

  • 75 g (1/4 cup) Madame Labriski date puree

  • 1 tsp. ground cinnamon

  • ½ tsp. nutmeg

  • ¼ tsp. allspice

  • Pinch of salt

  • 900 g (8 cups or 2 L) pumpkin chucks

  • 1.2 L (5 cups) chicken or vegetable stock

  • 75 g (1/2 cup) pumpkin seeds

  • 1 tbsp. vegetable oil

  • 1 onion, finely chopped

  • 75 g (1/4 cup) Madame Labriski date puree

  • 1 tsp. ground cinnamon

  • ½ tsp. nutmeg

  • ¼ tsp. allspice

  • Pinch of salt

  • 900 g (8 cups or 2 L) pumpkin chucks

  • 1.2 L (5 cups) chicken or vegetable stock

  • 75 g (1/2 cup) pumpkin seeds

  • Wash your hands properly and chop the onion.

  • Heat the oil in a large saucepan and sauté the onion for about 3 minutes.

  • Add the date puree (yes, its gives the spices a nice sweet and milder taste), all the spices and stir to combine.

  • Add a pinch of salt, then the pumpkin chunks.

  • Cover with the chicken or vegetable stock and simmer for about 30 minutes or until the pumpkin is soft.

  • Using a food processor, Vitamix or hand mixer, blend until smooth.

  • Add the pumpkin seeds and stir again.

  • Oh! Just wait and see how good it smells and how good it tastes.

  • Serve and savour the comfort it brings.

History

I like pumpkin… but, to be perfectly honest, not really that much.

I don’t mind it in October. Hahaha! (I prefer squash.) But this year, I felt like trying something new.

Do you know what I do when I’m not baking energizing snacks, desserts and breakfast treats? I make soup, soup and more soup. When I was pregnant, I could have eaten soup day and night. Soup is amazing. It can be anything from a light snack to a gargantuan meal. There are no limits to what you can do with soup. I’m just crazy about it.

Even though I make soups every single week, guess what my wonderful family said when they first tasted this soup? “Mommy, this is the best soup you’ve make in a looooong time.” So, I think it’s a hit.

A pumpkin soup with a subtle autumnal flavour which has a bit of date puree in it (obviously) to give the spices a little sweet and salty taste. I also add pumpkin seeds to make it even more nutritious because pumpkin seeds are high in protein.

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
