  • 225 g (3/4 cup) unsweetened applesauce

  • 115 g (1/2 cup) almond, soy or cow’s milk

  • 100 g (1/2 cup) coffee (or milk of your choice)

  • 1/2 tbsp. baking powder

  • 130 g (1 cup) quinoa flour

  • 50 g (2 cups) puffed quinoa

  • 50 g (2 cups) almond flour (also known as almond meal)

  • 40 g (1/4 cup) chia seeds

  • 30 g (1/4 cup) organic shelled hemp seeds

  • 175 g (1/2 to 1 cup) whole dates

  • 120 g (1 cup) whole pecans

  • 120 g (1 cup) whole walnuts

  • 100 g (1/2 cup) dairy-free dark chocolate chips (or regular dark or milk chocolate ones if you’re not lactose intolerant)

  • 55 g (1/2 cup) reduced sugar dried cranberries (or sweetened with fruit juice)

  • Optional: Lovely whole dates, walnuts and pecans, dried cranberries and chocolate chips. Basically, all the little culinary treasures that are hidden inside… the Royal Colossus.

  • Preheat oven to 350°F (180°C). If you’re using a convection oven, set to 325°F.

  • If you’re working with kitchen scales and weighing your ingredients, place your bowl on the scales and reset them to zero.

  • Put the date puree, the applesauce, the milk, the coffee and the baking powder into a bowl and stir thoroughly.

  • Next, add the quinoa flour, the puffed quinoa, the almond flour, the chia seeds and the ornganic shelled hemp seeds to the bowl. Mix.

  • What do you say we now add the dates, pecans, walnuts, chocolate chips and dried cranberries? Good thinking Watson! Hahaha! Now stir thoroughly again. You’ll see that the dough is quite sturdy but that’s normal. Keep going.

  • Line your tube cake pan with parchment paper. Two pieces should do the trick.

  • Spoon the dough into the cake tin and press it down. Don’t be afraid to compact it down firmly.

  • Now’s your chance to transform your colossus into a majestic masterpiece by taking the time to decorate it lavishly with whole dates, pecans, walnuts, dried cranberries and chocolate chips. If you’re thinking “wow” right now, just imagine how your guests will react. Be creative and don’t be afraid of covering the entire surface.

  • Bake for about 55 minutes. Cooking time may vary slightly depending on your oven.

  • Leave to cool and unmold. (Yahoo! Hardly any scrubbing to do. Thank heavens for parchment paper!)

  • Want to go one step further with the wowness? Adorn your Colossus with a ribbon.
    All you need to do is cut a strand of ribbon the length of the circumference, wrap it around the cake and fasten with a toothpick. Magic! Hahaha!

Uplifting, surprising and totally nutritious, it will turn any meal into a celebration. Why? Because people will feel ZERO guilt eating it and it’s high in protein, so you can also share the priceless gift of good health. How cool is that? So, what are you waiting for? Try your hand at this Royal Colossus and impress all your loved ones. One, two, three, goski!

Bring on the festivities, bring on the joy. Ever since I starting experimenting this recipe, I’ve even been eating it for breakfast. Hahaha! Made with a myriad of ingredients simply bursting with wholesomeness, why go without? In the morning, I spread a little peanut butter on my slice and dunk pieces in my almond milk coffee. Yumski! And in the evening, I eat it plain. Mamamia!

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

What can I use as a substitute for almond powder or hazelnut powder?

You can always substitute one type of nut powder for another type of nut powder or even powdered seeds (sesame seed or sunflower seed powder). You can also replace almond powder with organic tiger nut powder. (Tiger nuts are a tuber.)

What can I use as a substitute for one type of nut?

Simply any other type of nut you have in the cupboard (almonds, cashews, pecans, etc.). For example, if you don’t have any walnuts, you can use pecans. The important thing is not to tear your hair out!
