The Oven Do-Nuts

(Plain donuts)

  • 1⁄2 cup (150 g) date puree

  • 1 (155 g) small can or 2/3 cup of coconut milk or regular milk

  • 1 tablespoon of baking powder

  • Preheat the oven to 350°F (180°C).

  • In a bowl, thoroughly combine all of the ingredients.

  • Lightly grease the donut pan—otherwise, everything will stick.

  • Fill the donut cups three-quarters of the way up (the donuts will puff up upon baking!).

  • Bake for about 15 minutes.

  • Let cool, then remove from the pan.

  • If desired, decorate the donuts (see Tipski), then make another batch.

  • The smell will be memorable and the texture . . . sooo soft. Enjoy!

History

It’s amazing how a simple little round cake with a hole in the middle can bring so many smiles. Whether you prefer to dip them in your coffee or milk or not dunk them at all, these o-shaped rings have the wonderful side effect of causing great outbursts of pure joy.

In my family, we make our donuts in the fryer. I love donuts but I felt like coming up with a healthier version (after all, I AM waging war on refined sugar ;-). So, I treated myself to a donut baking pan and it’s been non-stop fun ever since. Just imagine how popular you’d be if you could serve donuts for breakfast, as a snack and, of course, for dessert.

If you don’t know what to ask for this Christmas or your next birthday, take my word for it, it’s a great gift idea. Hahaha!

I know a donut baking pan is a strange gift to give or receive… but the important thing to remember is, you’ll be rewarded by all those smiling faces around you.

Feel like something a bit fancier? Add a little Caramellosel spread to your donut. It’s heavenly! Even simpler: spread a bit of chocolate date puree on top and then dip them in your favourite topping. And you so you know, they’re also delicious with just a little peanut butter on top. Yumski! Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

The recipe calls for a plant-based beverage, can I use regular cow’s milk instead?

Yes, always.

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
