Chocolate cake-style vegan cookies… that taste too good to be healthy

  • 1/2 cup (150 g) unsweetened applesauce

  • 1/4 cup (60 ml) plant-based milk or milk of your choice

  • 2 teaspoons (10 ml) pure vanilla extract

  • 2 teaspoons (10 ml) baking powder

  • 1 tablespoon (15 ml) vinegar

  • Pinch of salt

  • 3/4 cup (75 g) gluten-free flour or flour of your choice

  • 1/2 cup (50 g) cocoa powder

  • 2 tablespoons (30 ml) chia seeds

  • 1/2 cup (100 g) dairy-free dark chocolate chips

  • 1/4 cup (35 g) raw cacao nibs (optional)

  • /4 cup (25 g) unsweetened shredded coconut (optional)

  • 1/2 cup (150 g) date puree

  • 1/2 cup (150 g) unsweetened applesauce

  • 1/4 cup (60 ml) plant-based milk or milk of your choice

  • 1 tablespoon (15 ml) vinegar

  • Pinch of salt

  • 3/4 cup (75 g) gluten-free flour or flour of your choice

  • 1/2 cup (50 g) cocoa powder

  • 2 tablespoons (30 ml) chia seeds

  • 1/2 cup (100 g) dairy-free dark chocolate chips

  • 1/4 cup (35 g) raw cacao nibs (optional)

  • /4 cup (25 g) unsweetened shredded coconut (optional)

9 steps

  • Wash your hands properly.

  • Preheat oven to 180°C (350°F).

  • In a bowl, combine the date puree, applesauce, plant-based milk, vanilla extract, baking powder and vinegar.

  • Take a few moments to watch that little bubbling effect (hahaha!) and stir well.

  • Stir in all the remaining ingredients.

  • Line your baking sheet with parchment paper or a silicone mat, otherwise everything will stick… that’s because there’s no fat whatsoever in this recipe.

  • Drop the dough onto the sheet using a spoon or measuring scoop to create nice plump Labriski cookies.

  • Bake for approximately 15 minutes.

  • Warning: you will be overcome with joy when you smell that delicious chocolatey aroma coming from your oven.

Do you love chocolate as much as I do?
To celebrate the release of the Madame Labriski books in France, I thought you might like to make this recipe with me.

It’s official, Madame Labriski’s cookbooks are now available in France. Pardon me? Have we just crossed to the other side of the pond? Yes, and this is the recipe I’m using to get the ball rolling.

The title of the book is Je déclare la guerre au sucre raffiné, which means “I’ve declared war on refined sugar”, and I just love it because that’s exactly what I’ve done.

And Canadians, you have no reason to be jealous… it’s the European version of my second cookbook published here under the title Bye-bye sucre raffiné, bonjour purée de dattes, and the English version Goodbye Refined Sugar! will also be available soon. How amazing is that?

To celebrate all this good news, there’s nothing like a nice tender chocolate cake-style cookie and you can even turn the recipe into a VEGAN or even gluten-free version if you feel like it. These super easy to make cookies which have now crossed the borders are my personal ode to my crazy desire (hahaha!) to make the switch to ingredients that are considered happy foods.

Yes, you can simply use any type of flour you have on hand.
