  • 150 g (½ cup) Madame Labriski date puree

  • 150 g (½ cup) unsweetened strawberry applesauce

  • 2 tsp. baking powder

  • OPTIONAL! (moment of madness): 1 single serving packet of Crystal Light cherry pomegranate drink mix. If you don’t fancy the crystals, swap for ½ tbsp. vanilla extract.

  • 100 g (1 cup) powdered almonds

  • 50 g (½ cup) certified gluten-free organic oat flour*
    *If you’re not gluten intolerant, use your favourite flour.

  • 50 g (½ cup) shredded unsweetened coconut

  • 65 g (½ cup) juicy dried cranberries (or dried cherries)

  • Around 8 to 10 (or more) nice fresh strawberries, chopped
    *Sorry, I forgot to check the weight ;-(

  • 20 g (1/8 cup) chia seeds

  • OPTIONAL! (not in the photo – hahaha): 100 g (½ cup) white or dark chocolate chips

  • Preheat oven to 350°F (180°C).

  • If you’re using kitchen scales and weighing your ingredients, set the scales to zero.

  • Put the date puree, applesauce, baking powder and the packet of crystals or vanilla into a bowl and stir well. Is it ok to wait for that little bubbling effect created by the baking powder before stirring? Defo. I’m actually like a big kid myself, I still enjoy watching it just as much as ever. Hahaha!

  • Next add the powdered almonds, flour, coconut, cranberries, strawberries, chia seeds and the chocolate chips, if using.

  • Mix well. Really, really well. Actually, now would the time to get mixing like you’ve never mixed before. (just kidding ;-)

  • Grab your cookie sheet and line it with parchment paper or a silicone baking mat. If you don’t, guess what? EVERYING WILL STICK. Noooooooooooo! Why’s that? Because there’s no fat whatsoever in these cookies. Simple as that.

  • Create nice plump cookies using a spoon (or measuring scoop) and, if you feel like it, garnish with a sprinkling of coconut and a nice chuck of strawberry.

  • Oh joy, oh joy, oh joy & summertime bliss

  • Pop them all into the oven and bake for 15 minutes at 350°F. Now, enjoy!

History

These cookies are surprisingly tasty and if you like fruity flavours, your dreams have just come true. If you prefer cookies crammed with nuts, you might find them a bit too juicy. A perfect shade of crimson, they’re a smash hit in my house. I’ve even served them to dinner guests for dessert accompanied by little scoops of ice-milk. Yum, yum, yum. Ever thought how nice it would be for making ice-milk sandwiches? Just perfect.

Baking FIESTA GRENADA cookies is like bringing a little LOVE into your daily life. Summer love packed into a single cookie… I like the idea, don’t you?

I love bright scarlet red strawberries that ooze with juice between my teeth. Yum-yummski! I love chocolate soy milk ice cream (to be eaten in moderation) and I love inventing summertime culinary treats. Today, we’re going to indulge in the fruits of my labours! Let me introduce a recipe I created as a personal tribute to the 150th anniversary of Canada. A distant relation of the Bomba Rosa, the J’aime ta fraise and the Berry Nice Things (featured in FUEL YOUR DAY, my first book in English), the FIESTA GRENADA is the ultimate in fruity freshness. GLUTEN-FREE, DAIRY-FREE and EGG-FREE, these cookies deliver moments of pure bliss when you bite into a nice super juicy chunk of strawberry and it creates an explosion fruity flavours in your mouth.

*TO THE SOFT-HEARTED: I want to make it very clear that this is one of the last times I’ll be using those little single serving packets of crystals to enhance a recipe. You’ve got to experiment a bit in life but from now on we’ll be opting more and more for 100% naturel ingredients.

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.

Can I use another type of flour than the one specified in the recipe?

Yes, you can simply use any type of flour you have on hand.

Is almond powder the same thing as ground almonds?

Yes. Almond powder, ground almonds, almond flour… they’re pretty much the same thing. Almond flour is available at supermarkets but the almonds are ground more finely. That being said, when a recipe calls for almond flour, you can easily use ground almonds instead.

What can I use as a substitute for almond powder or hazelnut powder?

You can always substitute one type of nut powder for another type of nut powder or even powdered seeds (sesame seed or sunflower seed powder). You can also replace almond powder with organic tiger nut powder. (Tiger nuts are a tuber.)
