The banana bread everybody has been waiting for

  • 2 medium mashed bananas

  • 1/4 cup (50 g) vegetable oil (or virgin sunflower oil from Maison Orphée)

  • 2 (100 g) eggs

  • 1/2 cup (115 g) plant-based beverage (or milk)

  • 1 tbsp. (15 ml) baking powder

  • Pinch of salt

  • 1 tsp. (5 ml) vanilla extract

  • 2 tbsp. (20 g) chia seeds (or insect powder)

  • 1 cup (120 g) oat flour (or wheat or gluten free)

  • 1 1/2 cups (135 g) quick-cooking oats (gluten free)

  • 1 cup (120 g) chopped walnuts

8 steps

  • Preheat oven to 350°F (180°C);

  • Lightly grease or line your loaf pan with parchment paper;

  • In a bowl, combine the date puree, mashed bananas, vegetable oil, eggs and milk together;

  • Stir in the baking powder, salt, vanilla extract and chia seeds. Mix well;

  • Stirring constantly, add the remaining ingredients;

  • Pour the mixture into the loaf pan. If desired, decorate with pieces of banana, just to give it style;

  • Bake for approximately one hour (60 minutes) at 350°F;

  • It’s going to smell like pure comfort. Allow to cool and then dig in!

History

Watch out! This banana bread recipe is probably the healthiest and most decadent one out there. Featured in my cookbook Collations énergisantes*, it was created in order to offer a genuinely wholesome and easy-to-make option. Bona fide banana bread WITH NO ADDED REFINED SUGAR that you can eat for breakfast, as a snack and even for dessert.

Has the bar been set too high? It’s exactly where it’s supposed to be.

But honestly, gone are the days when you’d put refined sugar in everything and everywhere. Hahaha!

P.S

If you decide to eat this banana bread prior to physical exercise, but you have a more sensitive stomach, you can make this recipe without the nuts. Because walnuts have a higher fat content, they can take a little longer to digest and this can cause some discomfort during high-intensity training.

If you make this recipe using wheat flour instead of oat flour, reduce the amount to ¼ cup. Why? Because oat flour tends to soak up all the liquid.

Can I make individual muffins instead of a loaf?

Yes, but the cooking time will be shorter. The time may vary depending on the recipe but I’d say 10 minutes less for standard muffins.

Can I replace yogurt with applesauce?

Yes, always.

Can I swap chia seeds for flax seeds and vice versa?

Yes, always. You can also use hemp seeds.
