Now That’s What I Call Banana Bread

(Banana and walnut)
A healthy breakfast mug muffin that tastes like a dessert.

  • ⅓ Fully ripe banana, mashed with a fork (30 g)

  • 1 Egg

  • 15 g Plant-based beverage (or milk) (1 tbsp.)

  • 2,5 ml Baking powder (½ tsp)

  • 1 pinch Ground nutmeg

  • 22 g Gluten-free flour (or oat or wheat flour) (3 tbsp.)

  • 6 g Quick-cooking oats (1 tbsp.)

  • 10 g Walnuts, chopped ( 1½ tbsp.)

  • 1 tablespoon of chopped walnuts and half a walnut

  • Put all the ingredients into a mug and mix very thoroughly.

  • Garnish, if desired. (But sometimes the nuts don’t stay on the top.)

  • Microwave for 1 to 2* minutes.

  • Please note: your Labriski delight will continue cooking after you take it out of the microwave.

  • Eat within the next few minutes (as soon as it’s no longer burning hot).

  • DELICIOUS to KNOW! Because it’s cooked in the microwave, it goes dry quickly and doesn’t keep very well.

This recipe takes no time at all to make… and it tastes just like banana bread.

How could anyone resist this tasty treat which is on a par with any complete and healthy breakfast? Honestly, this is a fantastic recipe. When you have a huge craving to bite into a slice of banana cake, all you have to do is put all the ingredients into a mug, mix and… magicski! It’s delicious and, better yet, it’s also a lot more wholesome.

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
