Here are my healthy banana chewy granola bars, the perfect recipe for using up those old, over-ripe bananas sitting in the freezer* or on the counter. And that’s why they’re called The Bananas Are Ripe bars, a name predestined for this honest to GOODNESS healthy granola bar recipe with NO REFINED SUGAR or fat.
I came up with this recipe to use up my bananas. I felt like making healthy, flavoursome bars that really taste of bananas. Did you know? Refined sugar enhances the flavour of food. If there was sugar added in this recipe, you could definitely use one or two fewer bananas and still get that great banana taste. Sugar makes it easier to create delicious tasting recipes… But in Madame Labriski’s world, we’re waging war on refined sugar and avoiding those “easy” solutions. We’ve made health our priority, and opted for a recipe for banana bars that are genuinely healthy and high in fibre. (As I’ve already mentioned ;-)
I also recently fell in love with lupin flour that’s packed with plant protein and now I add a little to virtually everything. Hahaha! If you don’t have any lupin flour on hand, you can still make this recipe. But if you have bought a bag, I hope you’re enjoying the different recipes I’ve come up with for you.
This recipe is a big winner in my house. I made the GLUTEN-FREE version and everyone loved them. These bars are also great as a snack after physical activity.
*Do you know the trick with those over-ripe bananas that end up spending the rest of their life in the freezer? When your bananas don’t appeal to anyone anymore, pop them in the freezer. Take them out only when you’re ready to cook with them and then just 60 seconds in the microwave and into the bowl. What’s more, they’ll be even tastier. Try it!
