  • 100 g (1/3 cup) Madame Labriski chocolate date puree

  • 100 g (1/3 cup) plain yogurt

  • 8 to 10 fresh strawberries, sliced

  • 1 tbsp. slivered almonds

  • 1 tbsp. dark chocolate chips or chunks

  • Wash your hands properly.

  • Wash the strawberries, remove the stems and slice.

  • In a bowl, thoroughly combine the yogurt and chocolate date puree. Ta-dahski! You’ve got your yogurt pudd.

  • Place the equivalent of 5 sliced strawberries in a glass dessert cup or bowl.

  • Pour half of the chocolate yogurt pudd mixture.

  • Add the remaining strawberries and the second layer of yogurt pudd.

  • Using a tablespoon, top with the slivered almonds and dark chocolate chips to give it a nice crunch. Yumski! Garnish with a strawberry.

  • Serve immediately or refrigerate to serve later.

  • I promise you, you’ll have everyone oohing and aahing and licking their lips with joy!

History

I went strawberry picking. It was a hot day and the smell in the strawberry field was almost intoxicating. Pure bliss. When I got home, I had this urge for chocolate pudding. And a thought suddenly popped into my head: what if I was to try making pudding that contained NO ADDED REFINED SUGAR?

Ta-dahski! A little bit of yogurt and a little chocolate date puree, and you’re ready to go! Simply heavenly. Such a simple yet amazingly delicious idea.

When I made this parfait, I found it looked so pretty I went outside to take photos and my kids and the neighbour’s kids were almost besides themselves with excitement at getting to taste it. The verdict: a resounding summertime success!

Halfway between a yogurt and a pudding, I decided to call it a Yogurt Pudd! A fresh strawberry and chocolate summer treat that’s almost too good to be true. How could anyone resist? Grab your parfait spoon!

*You don’t have any chocolate date puree? Simply use the same quantity of regular date puree and add cocoa to taste. You should be just fine ;-)

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!
