  • 80 g à 120 g (1/2 to 3/4 cup) raisins

7 steps

  • Preheat oven to 350°F (180°C).

  • Put the date puree, plain yogurt, egg and vanilla extract into a bowl and mix thoroughly. Then add the salt, baking soda, baking powder and cinnamon and, just for novelty’s sake, mix again.

  • Next add the flour, oats and flax or chia seeds to your bowl and, SURPRISE, SURPRISE, stir thoroughly again!

  • Finally, throw in the raisins and give it one last proper stir. (Don’t worry, we’re done after this ;-) By the way, this is the magic moment where you’re allowed to improvise and replace the raisins with whatever catches your fancy.

  • Line the Labriski aka cookie sheet with parchment paper or a silicone baking mat. Strange as it may seem, there’s absolutely NO fat at all in this recipe so if you don’t, EVERYTHING WILL STICK.

  • Spoon the dough onto the sheet. I personally use teaspoons and create nice big plump cookies. If you feel like it, you can garnish by sprinkling a few oats on top. (Don’t bother searching on the photos, I didn’t garnish mine.)

There are several options:
