  • 150 g (1/2 cup) unsweetened applesauce

  • 1 egg, or 65 g (1/4 cup or 60 ml) of milk (of plant-based milk)

  • 1 tablespoon (15 ml) pure vanilla extract

  • 1/2 teaspoon (2 ml) baking soda

  • 1 1/2 teaspoons (7 ml) baking powder

  • Pinch of salt

  • 150 g (1 cup) flour of your choice

  • 30 g (1/4 cup) ground flaxseeds

  • 100 to 150 g (1/2 to 3/4 cup) dark or white chocolate chips, to taste

  • Optional : A few drops of food coloring of your choice (optional, but fun!)

  • Preheat the oven to 350°F (180°C).

  • In a bowl, combine the ingredients the date puree, the unsweetened applesauce and the milk.

  • Add the vanilla extract, the baking soda and the baking powder. Wait for the light frothing to occur (just for fun), then mix well.

  • Mix in the flour, the ground flaxseeds, and the chocolate chips until combined.

  • Add a few drops of food coloring and have fun creating monster cookies.

  • Line a baking sheet with parchment paper or a silicone mat – otherwise, everything will stick.

  • Drop spoonfuls of dough to create beautifully round energy cookies.

  • Bake for about 15 minutes. Transfer to a cooling rack.

  • Have fun, and watch the surprised reactions of the lucky recipients.

History

A healthy chocolate chips energy cookie. Simply. It didn’t exist? Hum… no. It was time for me to try and create the Labriski version of the classic chocolate chips cookie. And there it is : The Boooooo. If you want to have fun with your kids, you can create Halloween cookies by using food coloring. How fun!
