Ingredients

  • 150 g (1/2 cup) Madame Labriski date puree

  • 150 g (1/2 cup) fat-free plain yogurt

  • 1 egg

  • 1 tbsp. (15 ml) vanilla extract

  • 1/2 tsp. (2.5 ml) baking soda

  • 1/2 tsp. (2.5 ml) baking powder

  • Pinch of salt

  • 90 g (3/4 cup) oat flour

  • 70 g (3/4 cup) quick cooking oats (one minute)

  • 15 g (1/4 cup) natural wheat bran

  • 40 g (1/4 cup) chia seeds

  • 30 g (1/4 cup) ground flax seeds

  • 75 g (1/2 cup) sunflower seeds (go all out and add a bit more if you feel like it ;-)

  • 80 g (1/2 cup) raisins

  • Sunflower seeds to garnish

9 steps

  • Preheat oven to 350°F (180°C).

  • Put the date puree, yogurt, egg and vanilla into a bowl and mix well.

  • Add the baking soda, baking powder and salt… and give it another stir.

  • Next, add all the remaining ingredients to the mixture. ALL THE OTHER INGREDIENTS? Yes, you read that right: the oat flour, rolled oats, wheat bran, chia seeds, flax seeds and lastly the sunflower seeds and raisins!

  • For the fifth step, mix well. When can you stop stirring together all the ingredients? When the dough is nice and smooth.

  • Watchoutski! This dough is so scrumptious, it’s very tempting to have a taste. Yum, yum, yum…  finger-licking good.

  • Line your cookie sheet with parchment paper or a silicone baking mat or lightly grease it. There’s absolutely no fat whatsoever in this recipe, so if you don’t, you’ll end up scrubbing cookie sheets and… if you’re anything like me, you can think of better things to do – ha! ha!

  • Spoon drop the dough onto the cookie sheet to create nice round shapes and flatten the tops with the back of the spoon. If you feel like it, put a heaped teaspoon of sunflower seeds on top of each cookie and then flatten – to make them stick – with the back of your spoon.

  • Pop the cookies in the oven for 15 minutes. Allow to cool on the cookie sheet or a cooling rack and, if possible, try and resist the temptation of tasting them, well for a little while at least. They’re so delish…
