  • 150 g (1/2 cup) store-bought unsweetened applesauce

  • 2 tbsp. (30 ml) caramel extract

  • 1/2 tsp. baking soda

  • 1/2 tbsp. baking powder

  • 150 g (1 1/2 cups) ground almonds

  • 50 to 60 g (1/2 cup) flour of your choice (wheat, spelt, oat, white, gluten-free, etc.)

  • 60 g (1/3 cup) Skor toffee bits (you can put more… it’s all up to you ;-)

  • 1/2 tsp. fleur de sel

  • Preheat oven to 350°F (180°C).

  • Put the date puree, applesauce, egg and caramel extract into a bowl and mix until well blended.

  • Add the baking soda and baking powder and stir again.

  • Next add the ground almonds and flour to the mixture and, just for a change, mix together.

  • Lastly, gradually stir in the Skor toffee bits and fleur de sel.

  • LABRISKIAN STEP! Line your Labriski sheet with a silicone baking mat or parchment paper. Why? Because there’s absolutely no fat in this recipe so if you don’t, EVERYTHING WILL STICK! NooooOOOOOoooooooo! We don’t have time to deal with that right now. Hahaha!

  • Form nice little cookies (treats) using teaspoons or even a small scoop. If you feel like it, you can garnish with a Skor toffee bit and grain of fleur de sel on top (this will help you maximize that wow factor!)

  • Pop them into the oven for 18 minutes and breathe in the amazingly wonderful aromas that will permeate your kitchen. Ha! ah! Ha!!

Where can I buy Madame Labriski date puree?

At IGA, Rachelle Béry, Marché Tradition and Bonichoix grocery stores across Quebec. My purees contain no preservatives and can be found in the fruit and vegetable section (yes, dates are fruit) near the pre-cut fruit and vegetables. If you can’t find them, simply ask a member of staff!

What can I use as a substitute for one egg?

There are several options:

  • 1 tbsp. ground chia seeds + 3 tbsp. water,
  • 2 tbsp. ground flaxseed + 2 tbsp. water,
  • ½ mashed banana,
  • Egg substitute (yes, it’s available at grocery stores, in the organic section).

Note that the texture of your recipes will be slightly different… but they’ll still be 100% delicious

What can I use as a substitute for almond powder or hazelnut powder?

You can always substitute one type of nut powder for another type of nut powder or even powdered seeds (sesame seed or sunflower seed powder). You can also replace almond powder with organic tiger nut powder. (Tiger nuts are a tuber.)

Is almond powder the same thing as ground almonds?

Yes. Almond powder, ground almonds, almond flour… they’re pretty much the same thing. Almond flour is available at supermarkets but the almonds are ground more finely. That being said, when a recipe calls for almond flour, you can easily use ground almonds instead.
