The Date with Destiny(Pecan and date muffins)

These are beyond doubt the best healthy date muffins, and they contain NO REFINED SUGAR and NO ADDED FAT. An easy recipe that will give you the energy fix you need on those busy mornings: my Date with Destiny muffins! Moist and tender and chock-full of date and pecan chunks, they’re also DAIRY-FREE. Another great Labriski solution to help you start your day on the right foot. Get out those wooden spoons and your paper muffin cups and go out on a Date with Destiny!

Date with Destiny muffins are genuine little bundles of culinary joy. Packed with fibre, dates and pecans and perfectly moist and tender, it’s going to be love at first bite.

AND THEN WHAT?

  1. Preheat the oven to 350 °F.

  2. In a bowl, combine the date puree, applesauce, milk of your choice and eggs.

  3. Add the pure vanilla extract, baking soda, baking powder, ground cinnamon and salt. Wait for a light frothing to occur (just for fun), then mix well.

  4. Mix in the flour, chia seeds, dried pitted dates and chopped pecans until combined.

  5. Line a muffin pan with parchment paper or a silicone liners. If you don’t have liner, lightly grease the pan- otherwise everything will stick.

  6. Divide the mixture evenly among the muffin cups.

  7. Decorate each muffin with a pecan half.

  8. Bake for about 42 minutes. Let cool. These muffins are best enjoyed once they are cooled to room temperature. Smells good!

Storage (in a airtight container)

Ingredients

  • 150 g (1/2 cup) Madame Labriski date puree 

  • 150 g (1/2 cup) unsweetened applesauce

  • 310 ml (1 ¼ cup) cow’s, almond, or soy milk

  • 2 eggs

  • 15 ml (1 tablespoon) pure vanilla extract

  • 1 ml (1/4 teaspoon) baking soda

  • 15 ml (1 tablespoon) baking powder

  • 7 ml (1 ½ teaspoons) ground cinnamon

  • Pinch of salt

  • 150 g (1 cup) pastry flour

  • 40 g (1/4 cup) chia seeds

  • 100 g (3/4 cup) dried pitted dates, chopped

  • 60 g (1/2 cup) chopped pecans

  • 6 pecans, halved
