The basic kit for cookie-ing to your heart’s content

All you really need is the desire to look after yourself and the ability to throw ALL the ingredients into a bowl, mix them together to make a dough that you can then spoon onto your cookie sheet. Once you’ve popped them in the oven, your patience will be put to the test while you await the ultimate satisfaction of savouring these yummy cookies and reaping the benefits of their healthy energy. Easy-peasy, right? The tools you’ll need
  • 1 wooden spoon
  • 2 teaspoons or tablespoons (for dropping the dough onto the cookie sheet)
  • 1 measuring cup or scales (working by weight is even quicker than working by volume)
  • 1 Labriski sheet (some people still call it a cookie sheet ;-)
  • 1 silicone baking mat or parchment paper
  • 1 mixing bowl
  • USEFUL! Measuring spoons
  • OPTIONAL! 1 cooling rack
  • All the ingredients in the recipe (hahaha!)
Pantry essentials checklist for baking Labriskis   
  • Dried dates
  • Plain fat-free yogurt or store-bought unsweetened applesauce
  • Baking soda
  • Baking powder
  • Salt
  • Chia or flax seeds (yay! They’re always interchangeable)
  • Flour… (wheat, spelt, kamut, oatmeal or your own personal favourite!)
  • Quick-cooking oats
  • Dried fruit, chocolate chips and anything else that catches your fancy!
