A wholesome WHEAT-FREE (gluten-free) and DAIRY-FREE recipe with a delicious banana and coconut flavour combination: THE LET’S GO BANANAS! Awesome! When Madame had a bit of trouble with some swelling in her tummy, it was strongly recommended she stay away from wheat and dairy products for a while. And the end result is this delicious recipe the whole family will love, with the added bonus of inspiring her to explore the world of gluten-free. What a great summer challenge!

Let’s Go Bananas energy cookies are a culinary creation designed to make you feel good. It was actually one of my first gluten-free recipes. It doesn’t matter whether you’re sensitive to wheat or not, they’re simply delicious. (Once again, my hubby who’s a bit fussy thinks they’re scrumptious.)
These cookies are great for breakfast, as a snack and even for dessert. Yumski!
Preheat oven to 350°F.
Put all the ingredients into one bowl and stir. What, it’s that simple? Yes ;-)
Line a baking sheet with parchment paper or a silicone mat, otherwise everything will stick, because there’s absolutely no fat whatsoever in this recipe.
Create small, beautifully round cookies using a teaspoon. If you want, garnish with a thin slice of banana. Very stylish!
Pop in the oven for 15 minutes at 350°F (180°C) and get ready for that delicious smell of bananas.
