The Fairy-of-the-Fields(Fruit pie)

A pie that’s super easy to make and doesn’t contain any added refined sugar (and it’s easy to make a gluten-free version too).

I used to be fascinated by those pies you sometimes see in American movies, the ones that seem to hold together so well. In my family, my maternal grandmother was the expert in the art of baking pies… but I sometimes found they lacked substance. (Sorry grandma… but it doesn’t take anything away from their absolutely perfect taste.) Hahaha! I had this picture in my head of a no-mess fruit pie and surprisingly, I managed to come up with one. The Fairy-of-the-Fields pie is an absolute marvel, and it holds together well too! It’s so perfect it almost looks like it could have been made by fairies. Enjoy.


  1. Preheat the oven to 350°F (180°C).

  2. In a bowl, prepare the graham cracker crust by combining all the ingredients from the first section.

  3. Line a 9 inch (23 cm) round pie or tart pan with parchment paper or lightly grease—otherwise, everything will stick.

  4. Spread the graham cracker mixture over the bottom of the prepared pan, then press it down. Set aside.

  5. Your challenge: resisting the urge to taste the mixture at this point!

  6. Prepare the filling. In a saucepan, combine the ingredients from the second section. Set over medium heat, then cook for 12 minutes, or until the fruits are very soft and start to break down.

  7. Remove from the heat, then stir in the ingredients from the third section.

  8. Pour the fruit mixture into the prepared crust.

  9. Bake for 30 minutes.

  10. The sweet scent of The Fairy-of-the-Fields . . . will invade your kitchen.

I’m going to share a little secret with you: even if you have no idea how to make pies, this one is fool-proof. It’s more than just simple to make, it’s actually child’s play. Plus, because it doesn’t contain any refined sugar, you can eat it for breakfast, as a snack and even for lunch. Brilliant! Enjoy!

The graham cracker crust

  • ⅓ cup (100 g) Madame Labriski date puree

  • 1⅓ cups (160 g) graham cracker crumbs

    *GLUTEN-FREE: replace the graham crackers with ground almonds or cashew nuts.
