The Bonhomme CarnavalCoconut cookies

This recipe is one of the top 10 Madame Labriski energy cookies. These workout-recovery cookies are a source of protein and of joy, and were created to salute the efforts of the athletes who take part in the Quebec Winter Carnival festivities. These energy cookies are a pure delight to munch after working out, or whenever you’re feeling hungry!

SOURCE OF FIBERS, PROTEINS… AND JOY!

 

AND THEN WHAT?

  1. Preheat the oven to 350°F (180°C).

  2. In a bowl, combine the ingredients from the Section 01.

  3. Add the ingredients from the Section 02. Wait for the light frothing to occur (just for fun), then mix well.

  4. Mix in the ingredients from the Section 03 until combined.

  5. Line a baking sheet with parchment paper or a silicone mat – otherwise, everything will stick.

  6. Drop spoonfuls of dough to create beautifully round energy cookies.

  7. Bake for about 12 minutes. Yum, it smells so good!

Storage (in a airtight container)

  • One week in the fridge
  • Three months in the freezer

IN A HURRY?

Put all the ingredients in a bowl. Mix, drop the dough on the cooking sheet and bake.

Ingredients

Section 01

  • 1/2 cup (150 g) date puree

  • 1/3 cup (100 g) nonfat plain yogourt

  • 1 egg

Section 02

  • 1 to 2 teaspoons (5 to 10 ml) pure almond extract, to taste

  • 1/2 teaspoon (2 ml) baking soda

  • 1 teaspoon (5 ml) baking powder

  • Pinch of salt

Section 03

  • 1 cup (100 g) quick-cooking rolled oats

  • 1/2 cup (50 g) undiluted powdered skim milk

  • 1/2 cup (50 g) almond flour

  • 2 cups (200 g) unsweetened shredded coconut

  • 1/2 cup (100 g) 75 % cocoa content dark chocolate chips (optional)
