There’s a distinct aroma of Father’s Day in the air. Have any ideas for an original recipe that’ll show your dad just how much you love him from the bottom of your heart? Come again? You can’t make up your mind between a decadent cake or a wholesome dessert chockablock with healthy ingredients? What if I told you that the PAPOUSKI is an amazing chocolate-caramel cake served with a scrumptious chocolate coulis oozing with wholesomeness? You’ve got to be kidding Madame Labriski, you didn’t go and do that? You bet I did! And as the saying goes, the way to man’s heart is through his stomach… so if you love your daddy, you can truly spoil him this Father’s Day, minus the refined sugar (shhhh!).  Hooray for date puree! YAHOOOO!

Preparation

The PAPOUSKI

  1. Preheat oven to 350°F (180°C).

  2. Let’s get to it! Put the Madame Labriski date puree (the caramel one for extra flavour), applesauce, your choice of plant-based or cow’s milk and the egg in a bowl and stir thoroughly.

  3. Now add the caramel extract, baking soda, baking powder and salt. MAGIC! Wait for that little bubbling effect and then mix again.

  4. Gradually stir in the following ingredients: spelt, wheat or pastry flour*, cacao powder, pecans, chocolate chips, Skor toffee bits and chia seeds, if desired.
    *Great news! This recipe also works perfectly well with gluten-free flour. Get mixing!

  5. Line your springform pan with parchment paper or lightly grease it… if not, everything will stick.

  6. Spread the batter in the pan.

  7. If you want to go all out and be fancy and really knock daddy’s socks off, you can create a design using pecans and chocolate chips.

  8. Bake for about 60 minutes. Allow to cool on a rack.

  9. While that’s in the oven, you can prepare the delicious coulis oozing with wholesomeness. (See the second section of ingredients)

  10. To serve, cut the cake into slices and drizzle with coulis.

  11. Mamma mia! Or should I say papa mia?! Can you smell the happiness?

The COULIS oozing with wholesomeness!

  1. Put all the ingredients in the “coulis” section into a bowl and mix thoroughly.

  2. With you be able to restrain yourself from polishing it all off with a spoon?

  3. You can drizzle this coulis on the Papouski cake, as well as over fresh fruit or on top of an energy cookie… Yumyumski! Get your creative juices flowing and make patterns with the coulis or even write daddy’s name. ;-) #Hooray for date puree!

Ingredients

The PAPOUSKI

  • 225 g (3/4 cup) Madame Labriski date puree (caramel flavour)

  • 150 g (½ cup) unsweetened applesauce

  • 225 g (1 cup) plant-based milk (or cow’s milk)

  • 1 egg

  • 1 tbsp. caramel extract

  • ½ tsp. baking soda

  • 1 tbsp. baking powder

  • Pinch of salt

  • 225 g (1½ cups) spelt, wheat or pastry flour*

  • 50 g (½ cup) cacao powder

  • 100 g (1 cup) pecans

  • 100 g (½ cup) chocolate chips

  • 80 g (½ cup) Skor toffee bits

  • OPTIONAL: 40 g (¼ cup) chia seeds.
