VEGAN and GLUTEN-FREE, this Labriskiesque creation is the most festive I’ve come up with in recent months. It’s a 100% healthy holiday season cake worthy of the very finest of royal banquets. Hahaha! Uplifting, surprising and totally nutritious, it will turn any meal into a celebration. Why? Because people will feel ZERO guilt eating it and it’s high in protein, so you can also share the priceless gift of good health. How cool is that? So, what are you waiting for? Try your hand at this Royal Colossus and impress all your loved ones. One, two, three, goski!

The Royal Colossus will turn any meal into the queen of the party. Grab your wooden spoon!

Step 01

  1. Preheat oven to 180°C (350°F). If you’re using a convection oven, set to 325°F.

  2. If you’re working with kitchen scales and weighing your ingredients, place your bowl on the scales and reset them to zero.

  3. Put all the ingredients listed in section 01 into a bowl and stir thoroughly.

Step 02

  1. Next, add all the ingredients listed in section 02 to the bowl. Mix.

Step 03

  1. What do you say we now add the ingredients listed in section 03? Good thinking Watson! Hahaha! Now stir thoroughly again. You’ll see that the dough is quite sturdy but that’s normal. Keep going.

The final steps before it goes into the oven

  1. Line your tube cake pan with parchment paper. Two pieces should do the trick.

  2. Spoon the dough into the cake tin and press it down. Don’t be afraid to compact it down firmly.

  3. Now’s your chance to transform your colossus into a majestic masterpiece by taking the time to decorate it lavishly with whole dates, pecans, walnuts, dried cranberries and chocolate chips. If you’re thinking “wow” right now, just imagine how your guests will react. Be creative and don’t be afraid of covering the entire surface.

  4. Bake for about 55 minutes. Cooking time may vary slightly depending on your oven.

  5. Leave to cool and unmold. (Yahoo! Hardly any scrubbing to do. Thank heavens for parchment paper!)

  6. Want to go one step further with the wowness? Adorn your Colossus with a ribbon.
    All you need to do is cut a strand of ribbon the length of the circumference, wrap it around the cake and fasten with a toothpick. Magic! Hahaha!

  7. Now relish!

Storage (in a airtight container)

  • Three days on the counter
  • A good week and a half in the fridge
  • Three months in the freezer

Ever since I starting experimenting this recipe, I’ve even been eating it for breakfast. Hahaha! Made with a myriad of ingredients simply bursting with wholesomeness, why go without? In the morning, I spread a little peanut butter on my slice and dunk pieces in my almond milk coffee. Yumski! And in the evening, I eat it plain. Mamamia!

Nothing but happiness, joy and wholesome health-pleasing goodness.
I must admit, I’m quite proud of this creation and well, let’s just say it ends my year on a high note.

Ingredients

Section 01

  • 3/4 cup (225 g) Madame Labriski date puree

  • 3/4 cup (225 g) unsweetened applesauce

  • 1/2 cup (130 g) almond, soy or cow’s milk

  • 1/2 cup (100 g) coffee (or milk of your choice)

  • 1/2 tbsp. baking powder

Section 02

  • 1 cup (130 g) quinoa flour

  • 2 cups (50 g) puffed quinoa

  • 2 cup (50 g) almond flour (also known as almond meal)

  • 1/4 cup (40 g) chia seeds

  • 1/4 cup (30 g) organic shelled hemp seeds

Section 03 : les plaisirs festifs

  • 1/2 to 1 cup (175 g) whole dates

  • 1 cup (120 g) whole pecans

  • 1 cup (120 g) whole walnuts

  • 1/2 cup (100 g) dairy-free dark chocolate chips (or regular dark or milk chocolate ones if you’re not lactose intolerant)

  • 1/2 cup (55 g) reduced sugar dried cranberries (or sweetened with fruit juice)

OPTIONAL! Section 04 to give your cake its regal appearance

  • Lovely whole dates, walnuts and pecans, dried cranberries and chocolate chips. Basically, all the little culinary treasures that are hidden inside… the Royal Colossus.
