Preheat oven to 350°F (180°C).
In a bowl, mix together the Madame Labriski date puree (original or vanilla), plant-based milk, chia seeds and one serving of vanilla-flavoured VEGA Protein Smoothie powder until well combined.
Now add the matcha, unsweetened toasted coconut flakes and puffed quinoa and stir thoroughly!
Line your cookie sheet with parchment paper or a silicone baking mat because if you don’t everything will stick. Now we wouldn’t want to let a swear word slip, would we? ;-)
Drop the dough onto a baking sheet using a spoon or measuring scoop to create nice plump Labriski cookies. If you want, you can use a smaller scoop to make handy, pocket-sized snacks that are perfect pick-me-ups after a workout or sports activity!
Bake for 15 to 20 minutes. Allow to cool on a rack before digging in. *If you prefer them to be a bit crispier, go for the longer, 20-minute cooking time.
