The Cute as a Button(Protein, blueberries and coconut)

PROTEIN (skim milk powder), caramel extract and blueberries. YUM-YUMSKI! Mix them all together and what do you get? Scrumptious cookies created in collaboration with the Zoo sauvage de Saint-Félicien (in Quebec’s Lac-Saint-Jean region) to mark the birth of their two polar bear cubs (oh soooooooo adorable) brought into the world by two separate females:  the CUTE AS A BUTTON cookies! Hahaha! And what do these adorable polar bear cubs eat? At first, lots of breast milk and fruit.  As summer is just around the corner, let’s celebrate with these high-protein cookies inspired by our little polar bear cubs, which will provide all the energy you need to play and keep active for ages and ages and ages. Plus, they contain NO REFINED SUGAR OR FAT and can be adapted into a GLUTEN-FREE version.

READY FOR THIS EASY STEP-BY-STEP RECIPE THAT WILL MAKE YOU WANT TO GO TO THE ZOO SAUVAGE DE ST-FÉLICIEN?

  1. Preheat oven to 180°C (350°F).

  2. Put the Madame Labriski date puree, applesauce and egg into a bowl and stir well.

  3. Add the caramel (or vanilla) extract, baking powder and salt. Wait for the little bubbling effect (for the fun of it) and give the mixture another good stir.

  4. Gradually stir in the remaining ingredients: milk powder (powdered!), flour, grated coconut and fresh or frozen blueberries and then mix again.

    *For a GLUTEN-FREE version, use your favourite GLUTEN-FREE flour.

     

  5. PASS ON THE WORDSKI! Frozen blueberries are great but… they have an awful habit of staining your fingers as well as changing the colour of your cookies. If you want a “less messy” result, go for fresh blueberries… from Lac St-Jean of course. Hahaha!

  6. IMPORTANT! Line your cookie sheet with parchment paper or a silicone baking mat. If not, everything will stick. Yup, that’s because there’s no fat at all in this recipe.

  7. Drop the dough onto the sheet using a spoon or measuring scoop to create nice plump Labriski cookies. MY CHALLENGE: To resist the temptation of eating ALL the cookie dough before you get them in the oven! ;-)

  8. LET’S GET DECORATING!
    Sprinkle the cookies with unsweetened coconut to create the white fur on your Cute as a Button cubs and add two juicy blueberries for the eyes. Nuts about coconut? Give them a nice generous sprinkling and your cookies will steal the show.

  9. Bake for approximately 15 minutes. Allow to cool on a rack before tucking in.

  10. Oh my, the whole house is going to smell so delish. Enjoy!

Ingredients

  • 150 g (1/2 cup) Madame Labriski date puree

  • 65 g (1/4 cup) unsweetened applesauce

  • 1 egg

  • 1 tbsp. caramel extract

  • 1/2 tbsp. baking powder

  • Pinch of salt

  • 150 g (1 cup) skim milk powder (undiluted)

  • 60 g (1/2 cup) spelt flour (or wheat, pastry or GLUTEN-FREE flour)

  • 25 g (1/4 cup) unsweetened grated coconut

  • Approximately 150 g (1 cup) fresh or frozen blueberries

GARNISH

  • 25 g (1/4 cup) unsweetened grated coconut

  • 2 blueberries or more per cookie to make the eyes of your cute little cubs.

For a DAIRY-FREE version

  • Substitute the cup of milk powder with a cup of flour ;-)
