Preheat oven to 180°C (350°F).
Put the Madame Labriski date puree, applesauce and egg into a bowl and stir well.
Add the caramel (or vanilla) extract, baking powder and salt. Wait for the little bubbling effect (for the fun of it) and give the mixture another good stir.
Gradually stir in the remaining ingredients: milk powder (powdered!), flour, grated coconut and fresh or frozen blueberries and then mix again.
*For a GLUTEN-FREE version, use your favourite GLUTEN-FREE flour.
PASS ON THE WORDSKI! Frozen blueberries are great but… they have an awful habit of staining your fingers as well as changing the colour of your cookies. If you want a “less messy” result, go for fresh blueberries… from Lac St-Jean of course. Hahaha!
IMPORTANT! Line your cookie sheet with parchment paper or a silicone baking mat. If not, everything will stick. Yup, that’s because there’s no fat at all in this recipe.
Drop the dough onto the sheet using a spoon or measuring scoop to create nice plump Labriski cookies. MY CHALLENGE: To resist the temptation of eating ALL the cookie dough before you get them in the oven! ;-)
LET’S GET DECORATING!
Sprinkle the cookies with unsweetened coconut to create the white fur on your Cute as a Button cubs and add two juicy blueberries for the eyes. Nuts about coconut? Give them a nice generous sprinkling and your cookies will steal the show.
Bake for approximately 15 minutes. Allow to cool on a rack before tucking in.
Oh my, the whole house is going to smell so delish. Enjoy!
