The Energizing Crispy CrunchCereal bars

Labriski cereal bars? No way? OH! YES WAY! Plus, they’re fat free and sugar free just like all the other Labriskian goodies on this site. Who doesn’t like a little crunch? And if we’re going to make cereal bars, we may as well raise the bar high. Loads of people write to me telling me they bring along these bars when they go hiking.
This new creation, whose star ingredient is peanut butter (or the nut butter of your choice), is called the Energizing Crispy Crunch and is one you can adapt using your favourite ingredients or the ones you happen to have in the cupboard. How cool is that?!

Source of fibre and loads of moreish tastiness!

My sister once told she couldn’t find any interesting recipes for energy bars and I thought to myself that I just had to give something a try...

  1. Preheat oven to 350°F (180°C).

  2. Put the egg, date puree and peanut butter into a bowl and mix thoroughly.

  3. Stir in the cereal and blend well.

  4. Now add all the remaining ingredients and continue putting those cookie-making muscles to the test. Hahaha!

  5. Once it’s all nicely mixed together, use a silicone baking mat to line your cookie sheet which, for the purpose at hand, will act as a Labriski bar sheet for today. Hahahaha! Don’t have a silicone baking mat? No worries, you can use parchment paper or simply grease the sheet lightly. (Watch out, because if you don’t, everything is going to stick. NOOOOO! That’s the last thing we need!)

  6. Spread the dough over the silicone mat using your wooden spoon. Don’t be afraid to press the mixture down firmly because if it’s not squashed down enough, the bars will end up being ultra-tender, so to speak. To be perfectly honest, they may not hold together properly ;-)

  7. Bake at 350°F for 15 minutes. OMG! OMG! OMG! An aroma of pure joy on the horizon!

  8. You’ll need to wait a little bit before cutting into bars, or any other shape that takes your fancy.

Storage (in a airtight container)

  • Five days on the counter
  • A good week and a half in the fridge
  • Three months in the freezer

  • 1 egg

  • 1/2 cup (150 g) date puree

  • 1/4 cup (about 72 g) natural peanut butter (or the nut butter of your choice)

  • 2 cups (about 130 g) corn flakes

  • 2 tbsp. (about 18 g) black chia seeds

  • 1/2 cup (about 55 g) pecans, coarsely chopped

  • 1/2 cup (about 60 g) raisins
