Preheat oven to 350°F (180°C).
Put the egg, date puree and peanut butter into a bowl and mix thoroughly.
Stir in the cereal and blend well.
Now add all the remaining ingredients and continue putting those cookie-making muscles to the test. Hahaha!
Once it’s all nicely mixed together, use a silicone baking mat to line your cookie sheet which, for the purpose at hand, will act as a Labriski bar sheet for today. Hahahaha! Don’t have a silicone baking mat? No worries, you can use parchment paper or simply grease the sheet lightly. (Watch out, because if you don’t, everything is going to stick. NOOOOO! That’s the last thing we need!)
Spread the dough over the silicone mat using your wooden spoon. Don’t be afraid to press the mixture down firmly because if it’s not squashed down enough, the bars will end up being ultra-tender, so to speak. To be perfectly honest, they may not hold together properly ;-)
Bake at 350°F for 15 minutes. OMG! OMG! OMG! An aroma of pure joy on the horizon!
You’ll need to wait a little bit before cutting into bars, or any other shape that takes your fancy.
