These GLUTEN-FREE* and DAIRY-FREE energy cookies with cherries and almonds are right up there in the special treats category: behold My Cherry Chérie! As summer draws to an end, these cookies usher in the fall season with their succulent aroma and splash of scarlet red. They’re tasty, full of protein and what’s more, you’ll notice that they have a special way of making people smile. Just wait and see, you’ll be everybody’s Cherry Chérie ;-) Hahaha!
The best time to eat them? Morning, noon and night. It all depends on whether you decide to make them with white chocolate chips or not.In the Labriski household, we prefer to just eat them all the time.
Baking My Cerise Chérie cookies will turn everyone into cheery cherry lovers. After all, isn’t life a bowl of cherries?!
* Depending on the flour you use…
** I chose Raspberry Cherry Starfruit. The mixed berries one works very well too.
*** Spelt, wheat, kamut, oatmeal: use your personal favourite!
Preheat oven to 350°F (180°C).
Put the date puree, unsweetened mixed berry applesauce, egg and almond extract into a bowl. Mix thoroughly. (The colour is… well, a little weird. BUT IT SMELLS SO DELICIOUSKI!). Now add the baking soda and powder and stir again.
Next add the flour, sliced almonds, dried cherries, chia seeds and white chocolate chips. Can I just throw everything into the bowl at the same time Madame Labriski? You bet! Once you’ve done that, give everything another good stir.
LABRISKITIP: It’s a good idea to line your cookie sheet with parchment paper or a silicone baking mat. If you don’t, EVERYTHING WILL STICK. (No way José!!!)
Drop the dough onto your cookie sheet using two teaspoons. If you feel like it, you can garnish with a dried cherry in the centre of each cookie.
Pop your little beauties in the oven and bake for 15 minutes at 350°F (180°C).
